Mashed Potatoes anyone?! If anybody knows me, they know I love a big old bowl of mashed potatoes—For breakfast, lunch, dinner, at any time of the year, you can find me stuffing my face. I recently perfected my recipe for this fluffy white wonder using on 3 main ingredients and some spices. They’ve been a hit every time I’ve made them!
For the fall season, I thought it would be fun to make things a little more interesting and turn them into an easy to eat treat. Mashed potato balls crusted with Beanfield’s bean & rice chips! Whaaaat. Yes, they are as good as they sound, and they’re super easy to make! They do however take a little bit of time, and it WILL get messy. I can ensure you that all of the time and mess created will be well worth it, as these mashed potato balls are the perfect thing to serve at any holiday parties, pot lucks, or family gatherings, and are sure to be a hit!

Enchilada Casserole, anyone?! Every so often, I have the opportunity to create a dish that I am thoroughly impressed with. I can tell you now, that this dish will be made again and again, whether it be for potlucks, family gatherings, or otherwise. Beanfields always come through with the tastiest chips around. The pico de gallo flavor was the perfect choice for this dish, and added some additional flavor and crunch that put it over the top. I have always been a fan of Mexican inspired cuisine, so this really hit the spot. Sharing this with Jasmine’s family really seemed to enjoy it too—the whole tray was gone in minutes! (read more…)
Who doesn’t love cornbread, right? Jasmine and I were doing a mukbang a few weeks back and we had the idea to make a pizza cake! (recipe on Sweet Simple Vegan) Instead of doing something traditional, we thought it would be fun to make it with some Mexican flare. The base of the cake was cornbread—specifically, this sun dried jalapeño corn bread. For the cake, we made the bread in larger pans, but these are mini muffin style. They pair perfectly with chili, black bean soup, etc. They can get a tad-bit dry, but when enjoyed with the fore-mentioned foods, it’s the perfect combo! (read more…)
