FIRE-BAKED SWEET POTATO S’MORES
Let’s set the scene: Camping in a Redwood grove somewhere along the winding roads of California’s central coast. After a long day of hiking and exploring, hunger sets in. Craving a sweet, yet hearty treat, we got to thinking. Then it hit us…what sounds better than s’mores…? Sweet Potato S’mores!
Jasmine & I just returned home from a 5 day / 4 night adventure up to Big Sur, CA, down to the San Luis Obispo area, and back home to LA. We camped in a Redwood grove and on a farm, thanks to hipcamp.com—experiencing some of the natural wonders of the world. Just before our trip, we hosted a Potato Bar Potluck, and had a plethora of potatoes left over. We decided to bring along a mix of both sweet and white taters to cook over the fire. One night, with a stroke of brilliance, we thought it would be a good idea to take some Dandies marshmallows, and some Coracao Confections dark chocolate and bake them together in a sweet potato, over the fire. The simple and easy to follow recipe is below:
THE RECIPE:
- 2 small to medium sweet potatoes
- 3 tbs crushed vegan chocolate
- 1/4 cup vegan marshmallows
- Wash and prick sweet potatoes, wrap in aluminum foil and roast over an open fire until soft, about 45 minutes.
- Remove from fire, unwrap, cut through sweet potatoes vertically and open slightly. Stuff with marshmallows and chocolate, then place back on hot coals or on over fire for 10 minutes.**
- Remove from heat and cool for at least 5 minutes, then dig in!
**Alternatively, you can bake the sweet potatoes in the oven until soft, remove and follow the same procedures above, then place back into the oven for a few minutes to melt the chocolate and marshmallows.

Is that the only way to cook potatoes while camping? I try to stay away from tinfoil. looks delicious though!
