Jasmine of sweetsimplevegan.com and I, teamed up to celebrate #Novemburger with two fun veggie burger recipes that are easy to make and delicious to eat!
A little over a month ago, I moved across the country from NJ to CA and have since been welcomed by some amazing people with incredible talent. In particular, Jasmine, who is so full of positive energy and an uplifting spirit. I feel so grateful to be able to share my interests and passions with her. We’ve been having the most fun developing recipe ideas and going on adventures across Southern California.
While I was living in a temporary space in LA, during the apartment hunt, we were inspired to make veggie burgers after trying a Hilary’s Eat Well burger that was reminiscent of Thanksgiving. We thought it would be fun to each make our own versions to share with you all. Below is my recipe for chickpea lentil burgers served on pretzel bun sliders. Jasmine’s recipe for gluten-free herbed millet burgers is just below!
THE PATTY
- 1 cup green lentils
- 1 cup chickpeas, drained + rinsed
- 1 cup red pepper, chopped
- 1 cup red onion, chopped
- 3/4 cup scallions, chopped
- 1 clove garlic
- 2 cups vegetable stock
- 2 tbsp fresh dill
- salt + pepper to taste
- Add 1 cup green lentils to medium sized pot and add 2 cups of vegetable stock
- Cook on medium heat for 25-30 mins
- Add lentils and all other ingredients to food processor and process
- Leave consistency chunky
- Remove from processor and add to large mixing bowl
- Combine throughly
- Shape burgers using a 1/4 measuring cup
- Line baking tray with 12 mini patties
- Bake on 400 degrees for 20 minutes
- flip tray after 10 minutes
PREPARING THE SLIDERS
- 12 mini pretzel buns
- Romaine lettuce
- Tomato, thinly sliced
- Avocado, thinly sliced
- Yellow mustard (organic)
- Toast buns at 350 degrees for 5 minutes or until golden brown
- Assemble burger with toppings
- Enjoy!
