A Hotel to Remember
12 days. 5 states. 1 epic adventure. The highlight of our trip was definitely our stay at the St. Julien Hotel in Boulder, Colorado. From the overly accommodating staff, to the delicious and wide array of vegan options—our expectations were exceeded many times over.
Upon arrival to the beautiful property, centrally located on Walnut St. in Boulder Colorado, Jasmine and I were greeted by the friendly hotel staff. After being shown to our pristine mountain view room, we were starved and ready for lunch. Luckily for us, it was Friday. Why lucky you ask? Every Friday the hotel restaurant, Jill’s, offers an all you can eat vegan buffet! Yes, you ready that right, a 100% all-you-can-eat vegan buffet…how awesome is that? It wasn’t just any old buffet either. A wide variety of gourmet vegan dishes were offered. Everything from soups and different pizzas, to salads, rice and pasta dishes, and more. As you can imagine I was the most excited ever to try taste everything I possibly could. After making several trips to fill my plate, each time with something new, I think I was able to try a little bit of everything. Of course I had to leave room for dessert! Jill’s even offered a full selection of vegan baked treats and a chocolate fondue station to dip fresh fruit. Talk about a dream come true!
The following evening for dinner, Jasmine and I enjoyed a unique 4 course vegan dinner specially made for us. The chef explained each dish to us in detail and it was quite clear that everything was made with love and care. Starting with a hearty pea soup with pesto toast, and ending with a special house made tempeh dish covered in a cherry sauce. I’ve showcased the photos down below. They also attempted to bring us dessert, but we were just a little too full to handle it.
Aside from the amazing vegan options and full vegan buffet available at Jill’s Restaurant, there are other amenities the St. Julien Hotel offers that makes it a must stop destination the next time you are in Boulder, CO! Each night we were there, different musical acts were featured on the back patio of the hotel. The first night a salsa band played, and everyone was getting down! The place was packed and the music was bumpin’! We only caught the tail end of the performance, but man was it a blast! The hotel also had bicycles available free of charge to take out around Boulder. With it being such a bike-friendly city, this was an awesome perk to be able to enjoy. Jasmine and I took bikes out one afternoon to bike around, and what a treat it was. Also on site, was a full size indoor pool and large hot tub, located right next to the fitness room, which made for a nice way to relax and massage any sore muscles after an intense workout.
After our long days exploring the beauty of Boulder, it was such a nice feeling to come back to our cozy mountain view room and relax for the evening. The room was filled with all of the amenities we could ask for, including a deep soaking tub and one of the most comfortable beds I’ve ever had the pleasure of sleeping on. Each night the staff left little chocolate covered cookies on our bed, and guess what…they were vegan!
I would recommend staying at the St. Julien Hotel next time you make a trip to the Boulder, CO area. From the diverse food options, to the world-class amenities, and stellar night life, it was the perfect place to stay for a weekend getaway. We can’t wait to come back sometime in the near future!
