As I get ready to move across the country, my Mom wanted make one of my favorite desserts before I left. These almond butter cups are some of the most delicious treats my tastebuds have ever had the pleasure of tasting. Below is her easy to follow recipe!
THE ALMOND BUTTERÂ FILLING
- 2 cups almond butter
- 1 cup coconut sugar
- 1/2 cup coconut oil
- 2 teaspoons vanilla extract
THE CHOCOLATE COATING
- 2/3 cup melted coconut oil
- 4 tablespoons coconut sugar
- 2/3 cup cacao powder
- 2 teaspoons vanilla extract
- 1/2 teaspoon sea salt
Line mini cupcake tray (24) with mini baking cups
Combine all filling ingredients and use mixer or food processor to blend together
Combine all of the chocolate coating ingredients in a medium / large bowl and whisk together.
Craft teaspoon sized balls of the almond butter filling and add to each baking cup. Fill each baking cup with the chocolate coating mixture to just under the top line. Place in fridge or freeze for 3-5 hours or until firm. Enjoy!
